APPELLATION : ARBOIS
Cuvée : "Grand Elevage" ("Long Aging") is a blend of our oldest vineyards of Savagnin in Arbois. They give a really concentrated harvest that alows a long aging of the wines…
Kind of soil : Grey marl deep and blue iridescent marl of the Lower Bajocian (Lias and Trias).
Exposure : The majority of plots are exposed to the East. The vines enjoy a gentle morning sun that allows a good aromatic accumulation and a progressive maturity.
Average age of the vine : 60 y.o. as a minimum
Grape variety : 100% Savagnin : typical variety and iconic of Jura. Savagnin form part of the Traimers' family. Its thick skin - that explains the low yield of juice that it gives to the press - is full of precursors of aromas. This rustic grape variety is both powerfull and fine, and when it is carefuly vinificated, it express an unrivaled complexity.
Pruning : "En arcure" (= arch), a local pruning.
Yield : With only 35 hl/ha, the juices were concentrated and balanced
Vineyard management : Ploughing once or twice per year. Rational and sustainable control against fungal diseases (mildew and oidium only). No pestcides, no anti-rot traitement.
Harvest : Hand harvested
Vinification : Alcoholic fermentation and malolactic fermentation (100% completed) are spontaneous, made by the natural floras of the grapes and of the cellar. No selected yeast or bacteria, no enzyme and no activator. The whole vinification takes place into oak barrels, most of them are 4 to 7 wines old. 15% of more recent barrels. No new barrel. Aged on the lees of fermentations with regular topping-up of the barrels for 24 months.
Bottling : No finning. Bottled at the domaine, by ourselves.
