APPELLATION : CÔTES DU JURA
Cuvée : "Les Sarres " is a single vineyard located in Buvilly, a blessed terroir for great white wines. This plot is planted for 85% with Chardonnay and for 15% with Savagnin. Each grape variety is vinificated and bottled separatly.
Kind of soil : Calcareous gravels of marine fossils on grey marl of the Lower Bajocian (Lias and Trias). This outstanding terroir gives to Les Sarres an incredible mineral intensity!
Exposure : The plot "Les Sarres" in located on an hilly slope, exposed fully to East, facing the village of Pupillin. This plot is sun-drenched as soon as the daybreak.
Average age of the vine : 27 y.o.
Grape variety : 100 % Chardonnay
Pruning : "En arcure" (= arch), a local pruning.
Yield : Small harvest in 2014 (part of the buds of the vineyard had suffered an hailstrom), i.e. 30 hl/ha
Vineyard management : Ploughing once or twice per year. Rational and sustainable control against fungal diseases (mildew and oidium only). No pestcides, no anti-rot traitement.
Harvest : Hand harvested
Vinification : Alcoholic fermentation and malolactic fermentation (100% completed) are spontaneous, made by the natural floras of the grapes and of the cellar. No selected yeast or bacteria, no enzyme and no activator. The whole vinification takes place into French oak barrels, most of them are 5 to 8 wines old (neutral). 20% of more recent barrels. No new oak. Aged on the lees of fermentations, with regular topping-up,during 22 months.
Bottling : No fining. Bottling at the cellar by ourselves.
Tasting notes : The pale yellow color with light silver touches invite to discover this Chardonnay from the Jura. ..The smell is rich and elegant, with a great range of fruits (lemon, orange skin, fresh coince, green pear, …), a light touch of fresh honey and a intense minerality. The richness of this wine is surprising into the mouth, where all the aromas "explode" and give way to an amazing minerality, close to salinity, given by the jurassic marls. A wine with a great harmony!
