Vinification and Aging
- Time of Harvest: The last ten days of August
- Vinification Technique: Non aggressive destemming , cryomaceration, pressing and subsequent fermentation in temperature controlled stainless steel vats for 20 to 25 days.
- Ageing Process: On fine lees for approx. 3 months
- Refinement in Bottles: Minimum 2 months
- Stabilising of the Product: Cold stabilization
