ENSAPIR Whisky is crafted in Even Sapir, perched on the western slopes of the Jerusalem Hills overlooking the valley. The crisp mountain air, intense summers, and cool nights accelerate the interaction between spirit and oak, imparting a distinct and robust character to the whisky.

The name is inspired by 'Ein Sapir'—the natural spring that flows through the village where our distillery stands.

We filled our first casks in January 2025. Each small batch is distilled and matured entirely on-site, guided by hand and time, and will only be bottled when it reaches absolute perfection
