L-lysine appears as a white powder. Lysine is one of the essential amino acids for the human body. It is a basic essential amino acid. Because the lysine content in cereal foods is very low and can be easily destroyed during processing, leading to deficiency, it is called the first limiting amino acid.
It is a white or nearly white freely flowing crystalline powder, almost odorless. It melts and decomposes at 263–264°C. It is generally quite stable but can clump in high humidity and may slightly discolor. It is stable below 60% relative humidity, but above that, it forms a dihydrate. It discolors when coexisting with vitamin C and vitamin K3. It decomposes under alkaline conditions or when heated directly with reducing sugars.
