From the famous Cortese grapes, the elegant White Wine from Piedmont
Wine making:
The free-run juice produced by soft pressing of the whole grapes is inoculated with selected yeasts (S.Cerevisiae) to start the alcoholic fermentation, which is conducted in temperature-controlled stainless steel tanks at around 18°C
The wine is then left on its fine lees, with light stirring. Before the winter it decants naturally, prior to being racked and stabilized to prevent the formation of sediment
In the following spring the wine is bottled, and left to mature in the cellar for 2-4 months The average annual production of this wine is 7,000 Bordeaux bottles (75 cl)
Tasting notes
Color: bright, straw-yellow with appealing greenish highlights
Nose: intense, fragrant and characteristic, with inviting apricot and
citrus fruit overtones on a very fine mineral backdrop
Taste: dry, warm, luscious, round
