Vinification : Harvest begins during the first week of September. A soft pressing is carried out where the free run wine is extracted. The juice thus obtained fermentation begins at a temperature controlled (16°) in stainless steel tanks, until reaching about 6° alcohol. Fermentation is blocked by a filtering and refrigeration process. Sparkling is obtained in pressurized stainless steel tanks.
