These ingredients were fermented by the traditional method that has been passed down since ancient times, and matured for months or years in classical wooden barrels. The soy milk skin is made from organic soy and natural spring water. It's solidified protein from the soy, so it is very nutritious and traditionally used as a source of protein in vegetarian dishes for monks. It forms on top of heated soy milk, which must be collected one layer at a time. The water we use is well-known natural spring water from the heights of a local mountain. It is mellow soft water that contains a good balance of minerals. The organic soybeans, rice, barley and vegetables are made by our group agricultural corporation, whom the representative has been practicing natural farming for over 60 years spanning two generations of farmers. The salt is sun-dried sea salt, rich in minerals. It has a complex flavor mixing of bitter, sweet, and "umami" (savory) tastes, enhancing the flavor of the other ingredients.
