DESCRIPTION
From the hills of Piceno area, an intense wine, rich in history, CasalFarneto Pecorino is fresh, mineral, balanced and harmonious. In this DOC white wine, personality and tradition perfectly combine respecting the vine’s typical features.
TECHNICAL SHEET
CasalFarneto Pecorino comes from the hillside of Ascoli Piceno province, on a hard clayey soil with southeast exposure. The process of “vinification” involves a soft pressing of the clusters and a thermo-controlled fermentation. The refining phase takes three months in steel and at least two months in bottle.
ORGANOLEPTIC PROPERTIES
Colour: Straw yellow.
Perfume: Characteristic varietal odour, quite intense and persistent of fruit and white flowers, acacia and broom.
Flavour: It is a wine of great varietal expression. In the palate the smell sensations are confirmed and develop in balance between freshness and flavour. Fine, persistent, with a slightly bitter aftertaste.
Pairings:
As an aperitif, with seafood dishes and vegetable soups, medium structured cheeses and the classic “Oliva Ascolana del Piceno” (breaded olives stuffed with meat).

It is the traditional harvest, taking place in the months of September and October, allowing a harvesting with the right balance of sugar and acids in the wine produced.
