Satsuma age is particularly tasty when still hot and when flavored with soy sauce and wasabi. This healthy delicacy is rich in protein and calcium and contains EPA and DHA, fatty acids that stimulate the brain. First, the meat from fresh fish is washed to remove any strong odors and then dried off. It is then minced, before salt, sake and other flavorings are added. Next it is kneaded, and finally, after being shaped into sausages and cakes it is deep fried in rapeseed oil.
