Fermentation and maceration: the fermentation time lasts 15 days at 14ºC after 10 hours of maceration.
Sensory tasting: yellow colour with steely trimmings. Bouquet of dry grass and toasted caramel, with a sweet bottom of white fruits, like peach and apricot, and citrus.
Fresh, light, with a pass that shows its acidity, appreciating the crater of the variety, which gives it great personality with a slightly bitter which gives structure and longevity.
Serving temperature: 6-8ºC.
Food match: seafood, white meets, pastas with soft dressing, white fishes, etc.
