The yam noodle contains a dietary fiber called glucomannan, which can significantly lower LDL cholesterol levels and body weights. The noodle is semi-translucent, long, and somewhat rubbery and it contain very little flavor on its own. Yam noodle is also an excellent substitute for traditional wheat pasta.
