Made with the new technique called "Cryo press system".
This process helps us to manatin the freshness of the wine with more intense bouquet:
We softly press the Arneis grapes without destem adding dry ice at -78°C to cool down the temperature of the just harvested bunches. This keep any kind of micro fermentation stopped, then the juice goes into a temperature controlled inox tank without fermenting for 3 / 4 days. After that period it will start and the vinification is classic for white wines.
This process slows the transformation of sugars into alcohol avoiding that the CO2 could bring away too much perfumes and the acidity will be better balanced.
