Organic Asamushi Sencha known in Japanese as “Asamushi-cha”, or lightly steamed green teas, are steamed for a shorter period of time than typical sencha. During processing, it is rolled into a needle-like shape, steamed and then dried, sorted, and blended. Sencha tends to have a refreshing flavor that can be described as vegetal, green, oceanic, seaweed, or grassy. Different levels of steaming are different “mushi”s. Lighter steaming (30 seconds) will result in a lighter, cleaner, more delicate, more astringent flavor, as well as a lighter color.
