Late harvest is a term applied to wines made from grapes left on the vine longer than usual. Late harvest is usually an indication of a sweet dessert wine, such as late harvest Riesling. Late harvest grapes are often more similar to raisins, but have been naturally dehydrated while on the vine.
This wine is fermented with 100% chardonnay free run juice ,light golden yellow in color and rich in citrus, grapefruit and small flowers aromas. Soft entry, full-bodied ,good acidity and long aftertaste.
Food suggestion: Suitable with sweet and sour dishes or spicy dishes.
Background:2011 was a year of low accumulated temperature. The spring was late and the autumn was early. We harvested the grape until 1st,Nov. More and more aromas were retained in the cold air and diffused in all the workshop. The whole fermentation process was slow, relaxed and pleasant. High quality original yeast and 100% free run juice ensure the wine’s characteristics and rare quality. It is the representation of mentun river’s chardonnay wine region .The number of this wine is small and feel it slowly.
