Crafted from 100% Koshu grapes—a traditional variety indigenous to Japan—grown in the Minaminoro district of Ichinomiya, Fuefuki City, Yamanashi Prefecture, home to our winery. This sparkling wine is made using the traditional method of bottle fermentation (méthode traditionnelle), with 20 months of aging on lees during the second fermentation in bottle. No dosage is added, allowing the natural character of the grape, and the unique climate and mineral-rich terroir of Japan, to fully shine through. It features fine, creamy bubbles naturally derived from the grapes, and a refreshing aroma reminiscent of Japanese citrus—hallmarks of the Koshu variety. Pairs beautifully with tempura, sashimi, sushi, grilled fish, and kaiseki cuisine.
