    Description
    • Pagadebito (paydebt), Cacciadebito (debt hunter), Uva d'Oro (golden grape) are nicknames which were given to the Passerina in the past.
    • The reason behind those names are coming from the extremely rich yield of this grape.
    • This native grapevine, from the Italian hills of the Adriatic, is vinificated on his own and it can be successfully matched with a broad range of food.
    Sensory analysis:
    • Straw yellow color with golden highlights, it has a good and intense smell typical of the piceno's hills.
    • Full-bodied on palate, enveloping, with a right acid mark which enhances its freshness.
    • Grape varieties: 100% Passerina.
    • Average age of vineyards: 15 years.
    • Soil: medium-textured, verging to clayey.
    • Vine training technique: double Guyot.
    • Harvesting: handpicking with selection of bunches in the second ten days of September.
    • Vinification: white vinification at controlled temperature. Refining in steel and for a short time on fine lees.
    • Alcohol: 12,50% vol.
    • Ideal temperature: 10°C-12°C.
