- This wine is done with a blend of several plots of old vines (50 y.o. as an average) that we have selected, from the area of the villages of Fuissé (at the South of Mâcon) and Burgy and Cruzille (at the North of Mâcon). These locations offer pure and elegant Chardonnays. Rational and sustainable vineyard management. Hand harvested. Spontaneous fermentations . The fermentations and ageing are completely done into oak barrels that are 6 to 10 wines old . 25% of more recent barrels. The ageing duration is 12 months. No racking and no stirring, in order to preserve the purity of the structure and the typicality of the terroir
