Vinification and Aging

  • Vinification Technique: Non aggressive destemming, cryomaceration, pressing and subsequent fermentation in temperature controlled stainless steel vats for 20 to 25 days
  • Ageing Process: On fine lees for approx. 3 months
  • Refinement in Bottles: Minimum 2 months
  • Stabilising of the Product: Cold stabilization
