    • Vintage: 2001.
    • Varieties: Chenin Blanc.
    • Origin region: Wellington, South Africa.
    Viticulture:
    • Soil: broken down granite & cardiff.
    • Root stock: various.
    • Trellis system: perold system (1 wired).
    • Yield: 5 to 7 tons per hectare.
    • Age: 38 years.
    Analysis:
    • Alcohol: 38% by volume.
    • Obs: 4.5.
    • Balling: 23 to 24 degrees.
    • Fermentation: juice fermented to base wine called rebate. Rebate is distilled once to low wine. Low wine is distilled (second distillation) where heart is kept separate.
    • Maturation: heart placed in French Oak barrels for 5 years. After 5 years taken from barrel and alcohol broken down to 38%.
    • Bottled: January 2009.
    Tasting note:
    • The brandy is a typical Armagnac style. Dried apricots and pear flavours on the nose, sweet and soft mouth feel with almost no burning sensation on the finish. Lovely.
    Food:
    • Creamy desserts, rich dark chocolate, mature cheeses and dried fruit compote.
