Soil : As the name of the cuvée indicates, the vineyard is located on fallen limestones, on deep grey clays. Stony and warm at the surface, fresh and compact on the subsoil...perfect condition for a balanced wine!
Exposure : Facing to South / South-West, on a very sloping hillside of the roche de Vergisson. Altitude about 260-280 meters.
Average age of the vines : 47 years old.
Grape variety : 100 % Chardonnay
Vineyard management : Rational and sustainable management of the vine disease control (only against of downy mildew and powdery mildew). The soil is plowed in the rows, wich help the root to go deep into the clay, to find the freshness...
Yield : 50 hl/ha in 2014
Harvest : The harvest is made by hand, at the optimum of maturity of the grapes (not too green of course, but neither overripe…we do not want to loose the freshness of this fine Chardonnay).
Vinification : Long and careful pressing, using a pneumatical press. Alcoholic fermentation and malolactic fermentation (completely done) are done into neutral French oak barrels, which are from 4 to 6 wines old. 25% of new oak, just to highlights the structure of the wine. The duration of the ageing on the lees is 18 months.
Bottling : No fining. Bottled by ourselves at the cellar.
