The yeast found in the Ariake Sea was improved to produce high levels of malic acid. It is a light sake with a refreshing acidity and sweetness, and a low alcohol content! The label is a one-of-a-kind with a different pattern created using the "hikihaku" technique, a material used in Kyoto Nishijin weaving! This new sake "ARATA" is full of uniqueness.

With an alcohol content of 13%, which is relatively low for sake, it offers a smooth and easy-to-drink experience. We recommend serving it well chilled in a wine glass.  This Cowboy Yamahai Tender was created for the Cowboy Yamahai series as a product to pair with meat dishes from the world. While it has ample acidity and savoriness, the alcoholic content has been held to 14.5%, making it an easy-to-drink sake during a meal. This was developed as a way to export to Western countries that prefer lower alcoholic contents and as a response from those who feel that high alcoholic content sake is too strong to drink. While the alcohol content has been reduced somewhat, it still has the depth of flavor at 14.5%, the standard level for red wines, and the gentle, refreshing savoriness of Yamahai balances well with the richness of steaks.    This&nbsp;sempuku junmai genshu gokuri&nbsp;junmai&nbsp;is&nbsp;formulated with only sake rice and koji, without&nbsp;water.   Without added ingredients, this sake allows the drinker to enjoy the original taste of the rice.   It features&nbsp;higher alcohol content, since it has been pressed but not diluted with added water.   Has a deep, rich flavour and alcohol content from 17% to 20%.   Best enjoyed when served on the rocks or chilled.

Daiginjo Sake

   Surprisingly smooth with a rich rice aroma.   Just the right amount of sweetness with a subtle fruity after taste.   Brewed using 100% yamadanishiki rice and the mountain spring water from Atsumayama.   Sake is being separated from the lees without external pressure by hanging the mash in bags and allowing the liquid to drip out under its own weight. Daiginjo 

   Slightly sweet followed by an elegant long fruity aftertaste.   Delicate, fruity, light and refreshing taste with a long aftertaste.   Brewed using 100% yamadanishiki rice and the mountain spring water from Atsumayama.   Sake is being separated from the lees without external pressure by hanging the mash in bags and allowing the liquid to drip out under its own weight.   Goes well with grilled seafood such as salt-grilled prawns and salt-grilled eel.   Rice polishing ratio: 40%.   Sake meter value: &plusmn;0.   Concentration of acid: 1.2.   Concentration of amino acid: 1.0.   Alcohol content: 16-17%.
