VARIETY  PREMIUM CABERNET SAUVIGNON (100%) WINERY SELECTION  ORIGIN  Central Valley, Chile  VINEYARDS Vineyards located on the southern edge of the Maule Valley. The soils are thin, clayey, and yield low. Summers are hot and dry, ensuring perfect berry ripeness. Exposure to predominantly southerly winds provides good ventilation, ensuring healthy vines. We include 10% Cabernet Sauvignon from our vineyard located in the Maipo Valley to add soft tannins, more elegant aromas, and a long finish. Vineyard yield: 12 tons/ha. Harvest date: Third week of April.  TECHNICAL NOTES The grapes were harvested in the third week of April, seeking the perfect balance between sugar, natural acidity, tannin maturity, and the fruity-floral aroma characteristic of this Cabernet Sauvignon. The grapes were selected from the best areas and in perfect health, harvested by hand. We carried out a brief pre-fermentation maceration at a low temperature and then fermented at temperatures between 28°C and 30°C. Ninety percent of this wine was aged in French and American oak barrels for 18 months. The remaining 20% was kept in stainless steel tanks to preserve its delicate fruity and floral aromas.  TASTING NOTES Perfect cherry red color, good intensity, and bright appeal. The aroma is intense, complex, and elegant, reminiscent of ripe red fruits such as cherry, red plum, and honey, along with tobacco and slightly smoky notes provided by the long barrel aging. This wine has a rich aroma, with abundant ripe tannins and a fine persistence. Its special characteristics will become increasingly refined with time in the bottle.  SERVING: 17°C. We recommend it as a pairing with red meats or spicy and savory dishes.

Ideally served with stewed meat, fish stew and soft cheese. Should be drunk in moderation from an appropriate wine glass and, ideally, open the bottle one hour before serving. Serving temperature of 18ºC.

Fermentation process at 27ºC of temperature in Inox cuvees, with long contact period of solid parts. After fermentation process the wine remains in American oak 4 months. ANALYTIC PARAMETERS Alcoholic Degree: 13% Total Sugar: : (8 ± 1) g/L TASTE NOTES Wine produced from selected grapes in some plots of our breeds Aragonez (60%) and Syrah (40%). After vinification it was subjected to a slight stage in American Oak wood for 4 months. It is a wine of red color Granada, with aroma of ripe red fruits, vanilla and soft taste, denoting a medium structure. It should be consumed in a suitable glass beaker at a temperature of 15ºC to 17ºC. Gastronomy: To the taste of the consumer. We suggest you to carry out your harmonization experiments with this wine.

TECHNICAL NOTES The grapes were hand-picked in mid-April, providing a good balance between sugars, acids, and tannins. Fermentation took place at 28-29°C, with a 6-day post-fermentation maceration. Ninety percent of this wine was aged in French and American oak for 18 months, and the remainder came from stainless steel cellars, providing fruity aromas and freshness. This wine has not been treated or filtered to preserve its natural aromas and structure.  TASTING NOTES Purple cherry red with vivid violet edges. A wine with intense aromas, dominated by black fruits such as blackberries and black cherries, blending with the toasted notes of coffee and tobacco derived from barrel aging. A delicious, full-bodied wine with persistent aromas layered by sweet, round tannins. Despite being a young wine, its balanced structure and proper ripeness allow it to be consumed now, or to continue developing favorably for several years.  SERVE: 17°C. Recommended with all red meats, lamb, and spiced dishes.

Bodegas Salzillo

Camelot is our most treasured creation, a sweet wine made from overripe grapes that mature naturally on the vine, each bunch capturing the purest essence of Monastrell. Production is extremely limited —no more than 8,000 bottles per year— as only the finest grapes are selected and further dried in the winery to enhance their natural sweetness. Fermentation is carefully halted to preserve the grape’s own sugar, resulting in an elegant, silky wine with a perfectly balanced sweetness that embodies the noble character of Jumilla. VINICULTURE: •ALTITUDE: 720 m. • SOIL: sandy with a limestone mantle on the surface, shallow soil • AGE: 60 years old. • CULTIVATION: dry-farmed, bush vines with extremely low production, 0,5 Kgs per vine. •HARVEST: late October even at the end of November, manual harvesting WINEMAKING Made from 100% Monastrell grapes overripe on the vine itself. This is achieved thanks to the previous harvests leaving only a part of the grapes that will give rise to our Camelot. The grapes are macerated for about fifteen days at low temperatures, producing a fermentation stop due to the addition of alcohol. The must is obtained thanks to a low intensity pressing, and is deposited in the racking vats and then transferred to the barrels to tame its tannins. TASTING ColourIntense cherry color. Nose aromas of overripe fruits such as plum, fig, and raisin, accompanied by woody terpenes thanks to its time in oak. Palate reveals a harmonious balance between sugars and acidity, yielding a wine that is both exuberant and exquisite, leaving a long-lasting trail and a joyful memory.

Vineyard yield: 12 tons/ha  TECHNICAL NOTES The grapes were harvested in late April with ripe tannins and a good balance of sugars and aromas. Harvesting was done manually and transported to the winery in small trays (15 kg) to protect the integrity of the fruit. Fermentation took place between 28°C and 30°C, with a 16-day maceration. Eighty-five percent of this wine was aged for 24 months in French and American oak barrels. The remaining 15% was kept in stainless steel to preserve the fruity aromas.  TASTING NOTES Beautiful and intense purple-red color. Fine aromas and delicate intensity harmonize the ripe fruit and the elegant notes provided by barrel aging, enhancing the black cherry and dried fruit highlights over the spicy notes. Powerful aromas are perceived on the palate, with a strong structure resting on ripe tannins and woody notes. This is a harmonious wine with a persistent and solid finish, ensuring good evolution and a long cellar life.  SERVE at 18°C. Recommended with spicy dishes, red meats or game, and mature cheeses.
