Even before Hachirogata was reclaimed, Chida-Saichi Shoten has been making tsukuda-ni.

Tsukuda-ni refers to small aquatic products simmered in a Japanese cauldron with savoury and sweet sauce like Teriyaki sauce. It has been playing a role as a preserved food and side dish for a long period. 

The tsukudani is also known as the 'amber of the lake' because of its sweetness and umami (flavour).

We produce Tsukuda-ni using the "raw cooking method", in which the fish are cooked freshly caught, and the skills of craftsmen who always produce the highest quality Tsukuda-ni in response to nature, which changes on a daily basis.

We have established ourselves as a long-lasting tsukuda-ni company among the more than 100 tsukuda-ni companies in the Hachirogata area, where there used to be more than a hundred in disarray.

We also produce deep-fried fish using traditional fishery products from the Hachirogata area.

Starting with 'Crispy Crunchy WAKASAGI', which is deep-fried wakasagi (Japanese pond smelt), clams and horse mackerel are deep-fried to a lightly-crispy texture and mixed with our secret tsukuda-ni sauce.

Many other very popular new products are sold using the artisanal techniques of kara-age and products such as burdock root and sweet potato.
