<> Long-established tsukuda-ni maker that carries on Lake Hachirogata culture <> Lake Hachirogata was once the second largest lake in Japan. The reclamation of the lake during the Showa period (1926-1989) led to a drastic reduction in the lake's water area and the decline of the tsukuda-ni culture. Our mission is to carry on Lake Hachirogata-culture of 8000 years, utilise the ever-abundant water resources of Lake Hachirogata, and to pass on the Hachirogata tsukuda-ni-culture to future generations. <> Even before Hachirogata was reclaimed, Chida-Saichi Shoten has been making tsukuda-ni. Tsukuda-ni refers to small aquatic products simmered in a Japanese cauldron with savoury and sweet sauce like Teriyaki sauce. It has been playing a role as a preserved food and side dish for a long period. The tsukudani is also known as the 'amber of the lake' because of its sweetness and umami (flavour). We produce Tsukuda-ni using the "raw cooking method", in which the fish are cooked freshly caught, and the skills of craftsmen who always produce the highest quality Tsukuda-ni in response to nature, which changes on a daily basis. We have established ourselves as a long-lasting tsukuda-ni company among the more than 100 tsukuda-ni companies in the Hachirogata area, where there used to be more than a hundred in disarray. <> We also produce deep-fried fish using traditional fishery products from the Hachirogata area. Starting with 'Crispy Crunchy WAKASAGI', which is deep-fried wakasagi (Japanese pond smelt), clams and horse mackerel are deep-fried to a lightly-crispy texture and mixed with our secret tsukuda-ni sauce. Many other very popular new products are sold using the artisanal techniques of kara-age and products such as burdock root and sweet potato. <> Tsukudani has long played a role as a preserved food. Tsukudani can be stored at room temperature and can last even longer when frozen, and has the potential to become a Japanese product that reaches the world. <> Tsukuda-ni has always been on the fringes of the Japanese dining table, adding a touch of happiness. It can be used as a side dish with rice, sake, rice balls, tea... Whether in Japan or abroad, we bring the sweetness and umami of relaxation to your doorstep.
