TERROIR & VINIFICATION: Clay limestone stony soil. Sustainable agriculture with plowing of the vineyard and thinning out of the leaves. Manual harvest. Usage of a sorting table, destemming and fermentation in oak barrels.
Ageing in oak barrels (1/3rd brand new, 2/3rd used) for 12 months.
TASTING NOTES
Appearance: Deep ruby color
Nose: aromas of black fruit dominated by blackcurrant.
Palate: ample, complex with soft tannins coating the mouth with elegance. Long finish.
WINE AND FOOD PAIRING: Ideal with veal, red meat, game and also because the tannins are melted, some cheeses such as dry cheeses.
