The dry siliceous sub soil, the climatic influences of the Atlas mountains, the elevation of the vineyard (700 m) and a very generous sunshine participate in the elaboration of a very harmonious wine.
Harvest: carried out between end of August and end of September, it is entirely manual.
The grapes are gathered in 18kg cases and are sorted on arrival.
Fermentation: traditional with controlled temperature between 25 and 28°C.
Ageing: 100% aged in new fine-grained French oak barrels made from oak coming from the forests of Allier and Tronçais, followed by at least 18 months in laid bottles in the cellar.
