The land on which the vineyards rest upon have medium texture characteristics with clay-limestone prevalence; they are located at an altitude of between 200 and 260 meters above sea level, with east / south-east exposure. The silty-clay matrix of the soil determines most of the characteristics related to the chemical, physical and biological fertility. The situation regarding the fauna biodiversity of the soil is good. It has confirmed the presence of biological forms such as Diluir and Symphyla and in autumn surveys some very sensitive groups, typical of unpolluted soils as Pseudoscorpions have appeared

Harvest
The harvest takes place during the first days of October and is strictly manual, placed into small crates of 12kg each
Vinification
The selection of grapes is manual and takes place on long sorting tables. The fallen grapes reach the truncated oak vats: without temperature control and without the addition of selected yeasts and the must concludes the fermentation. It remains macerating on the skins for approximately one month
Ageing
The wine evolves, on its fine lees, for 16 months in barrels of small dimensions and only in French Oak. Ageing in bottles then follows
