VINEYARDS
Vineyards located on the southern edge of the Maule Valley. The soils are thin, clayey, and yield low. Summers are hot and dry, ensuring perfect berry ripeness. Exposure to predominantly southerly winds provides good ventilation, ensuring healthy vines. We include 10% Cabernet Sauvignon from our vineyard located in the Maipo Valley to add soft tannins, more elegant aromas, and a long finish.
Vineyard yield: 12 tons/ha.
Harvest date: Third week of April.
TECHNICAL NOTES
The grapes were harvested in the third week of April, seeking the perfect balance between sugar, natural acidity, tannin maturity, and the fruity-floral aroma characteristic of this Cabernet Sauvignon. The grapes were selected from the best areas and in perfect health, harvested by hand. We carried out a brief pre-fermentation maceration at a low temperature and then fermented at temperatures between 28°C and 30°C. Ninety percent of this wine was aged in French and American oak barrels for 18 months. The remaining 20% was kept in stainless steel tanks to preserve its delicate fruity and floral aromas.
TASTING NOTES
Perfect cherry red color, good intensity, and bright appeal. The aroma is intense, complex, and elegant, reminiscent of ripe red fruits such as cherry, red plum, and honey, along with tobacco and slightly smoky notes provided by the long barrel aging. This wine has a rich aroma, with abundant ripe tannins and a fine persistence. Its special characteristics will become increasingly refined with time in the bottle.
SERVING: 17°C. We recommend it as a pairing with red meats or spicy and savory dishes.
