- Zero Sulfites Added
- Grapes from the young vineyard hand-picked with a greater attention of healthy grapes and placed in small boxes. Harvest at the end of September or early October.
- Fermentation in wooden vats at a controlled temperature for 10/15 days.
- Maturation in steel for 6 months, with frequent decanting (raking)to lower the sulfate naturally produced during fermentation.
- Bottle ageing of 8/12 months.
- The main feature of this type of wine is due to the total respect of the climate. So we have significant differences if we compare different vintages.
