This rich-tasting sour milk is made from raw milk from dairy cows reared at the base of the Kirishima mountain range in Southern Kyushu. After being acquired, the milk undergoes mild lactic acid fermentation using bifidobacterium, acidophilus, and streptococcus thermophilus. This results in a smooth, mild-flavored drink without the sourness of yogurt.
