Grapes: 100% Teroldego (Trentino local grape variety).
Soil type: Alluvial landfill, highly fertile surface, well-drained under soil.
Vine training system: Guyot and Trentino pergola.
Vinification: Grapes are selected and harvested by hand and undergo the red vinification process in steel vats. The fermentation consists of 12-15 day maceration on the skins at controlled temperature (26-28 °C).
Then the wine is aged in small oak casks for about 18-24 months. Then, an extended ageing in the bottle, for about 2 years.
Characteristics: Intense ruby red colour, tending to garnet on ageing. Intense, fruity with raspberry and redcurrant notes, ample and refined, with spicy notes on the nose. Dry, decisive, good sapidity and tannin taste with a lightly balsamic hint.
As accompaniment: Game dishes, mixed grill, veal stew, matured cheese and local salami.
