ARTS DE LUNA CHARDONNAY BRUT Traditional Method, D.O. CAVA
“Arts de Luna”, heart of the vine, birth of the shoots that will be the next harvest. A tribute to our land and to the fertility of the vines.
Made exclusively from the grape variety Chardonnay grown on vines in the area ‘Medio Dia’, where the sparse land, exposed to many hours of sunlight, produce low yields per plant of very high quality.
Region
Denominación de Origen Cava (Requena). Continental climate influenced by the Mediterranean. Large day/night temperature variation. Average annual temperature: 13ºC. Chalk/clay soils.
Grape Variety
Winemaking
The Chardonnay grapes are harvested at the end of August. Cold maceration in a pneumatic press. Fermentation at 14ºC in stainless steel tanks. In January a process called ‘tiraje’ occurs where the new wine is bottled and the second fermentation occurs in the bottle at a temperature of 16ºC. The Cava is stored in ‘rima’, special containers for holding the bottles in position, for 12 months.
