Total destalking of the grapes by hand. Only the most healthy and beautiful grapes are selected to be put into the barrel.
Put the entire grapes into the barrel and traditional wine making with riddling of the barrels 3 times a day.
Long maceration in the barrel 12 months of ageing with regular refill.

Tasting
Colour: Deep garnet with steady violet reflects.
Nose: Notes of raspberry and licorice conjugated to aromas of cooked red berries.
Taste: Very concentrated, round in the notes of cooked fruits. The aromatic power of the Syrah explodes with the concentration of the Cabernet. Notes of mocha and coffee come to complete the exceptionally rich aromatic pallet. The tannin is fine and very elegant. Aromas of black fruits express themselves in an intense way. A wine of a strong character!
