Camalaione IGT Toscana is made from 70% Sauvignon, 15% Syrah and 15% Merlot grapes. The red wine is directly racked into new oak barrels where malolactic fermentation takes place on the lees that are continuously moved through batonnage. It matures in the same barrels for 18/20 months and it is finished in the bottle for 12 months minimum.
- Vinification is traditional starting with alcoholic fermentation, that takes place in 500 liter oak barrels utilized as small vats for 20/25 days.
