This Chianti Classico DOCG features deep ruby red color with violet hints. It has a nice bouquet of mature fruits such as morello cherry and plum with delicate hints of durmast. This red wine is full-bodied and thick with generous tannins.
Gastronomic match: it finds the best expression with typical Tuscan starters. Ideal also with first courses (pasta), “ribollita” (Tuscan soup), grilled meat and cheeses.
Bouquet: the vinification technique enhances the intense fruity aromas. In particular, mature fruit such as morello cherry and plum with delicate durmast.
The grapes used for this Chianti Classico come from a great selection made in the vineyard.
These grapes have excellent maturation characteristics.
Before going into the stalk-remover, the grapes are further selected through a conveyor belt on which another final sorting of the bunches is made.
After being separated in the most delicate way from the stalk, the grape bunch ferments in concrete vats.
The skins maceration lasts about two weeks. During this process the necessary oenological techniques are implemented.
The maturation and the ageing start in December, after the malolactic fermentation. The wine is moved into medium/large size barrels and rests there about 14 months.
The ageing is made in bottle at least 3 months in thermo-controlled areas.
