A premium Soave doc white wine obtained from local Garganega varietal with low yield vineyards and careful attention to vinification, conducted in stainless steel. A pleasant surprise to the palate, with both freshness and depth, giving it and interesting and balanced structure.

Pergoletta 3800 vines/ha.
Harvest and vinification:
The grapes are harvested at different times of ripening and separately crushed, with cold pre-fermentation skin contact. Then the grapes are gently pressed and fermented at 16-18°C. The wine is blended in January and racked in stainless steel tanks with the thin lees. Then there is a short bottle refinement.

Tasting notes:
Delicate straw yellow. A complex aroma with scents of summer fruits, exotic fruits, pears, peaches, herbs, almonds, and intense minerality. The taste is rich and fresh, with a firm saltiness which doesn’t disturb, rather increases the softness. Mild vanilla taste and good persistency.

8°/10°C.

Aperitif, appetizers, raw fish including sushi and white meat.
