With rice and soybeans as raw material, the produced Monascus red pigment is a high class natural food pigment in use of liquid submerged fermentation and unique refining technology.
This product has high color value, good water-solubility, high purity, good optical stability, wide range pH application, pure tone, and convenient usage, etc.
Traits: red or wine red liquid or powder, soluble in water, ethanol, aether & glacial acetic acid.
Liquor is bright red as thin layer while it dark brown and fluorescent as thicker layer.
Color tone to pH value is stable (PH4~10).
Heat resistance is strong (above 100℃).
It is stable to ultraviolet radiation but chroma will decline under daylight, hardly influenced by metal ions (such as 0.01mol/L Ca2+,Mg2+,Fe2+,Cu2+).
As well as oxidation reductants, e.g. 0.1% hydrogen dioxide, vitamine C, sodium sulphitec, etc.
Applications: widely used in meat, sauced products, spices, seafood, flour products, puffed food, juice drinks, dairy products and cosmetics.
Usage: this product has good water and alcohol solubility.
It can be dissolved directly in water and 70% alcohol according to the amount required, then added into the ingredients to color according to the chroma required.
If use 50℃ water, the solution will be shorter.
Packing: powder packed in foil bag and carton (200g/bag, 5kg/bag).
Liquor packed in plastic barrel and carton (5kg/barrel, 20kg/barrel).
Packing also can be as per customer's requirement.
Storage and shelf life: should be sealed and placed in ventilation, cool, dry place to prevent light & heat, forbidden to be placed with toxic substances.
Under circumstances that packaging is complete and without unsealing, the shelf life is two years for powder, 6 months for liquid.
