Vinification : The Moscato and Malvasia are hand-picked in crates from the end of August – the beginning of September. The Croatina harvest is picked around the end of September, which is followed by a soft pressing, where only the free run wine is extracted, resulting in a typical rosy colour with amber reflections. The wine thus obtained fermentation begins at a temperature controlled (18°) in stainless steel tanks
