This Moscadello di Montalcino DOC is made in Montalcino. The dessert wine is produced with Moscato grapes, which are harvested by hand with careful selection and are immediately destemmed. The white wine has been macerated with the skins for about 24-48 hours at environmental temperature with drawing off, soft pressing and fermentation at low temperature (10-12ºC). When 2/3 of the total sugar is transformed, fermentation is stopped and the temperature is lowered until -2ºC then. It is moved repeatedly to eliminate the major part of yeasts. When it is clear enough, the white wine is filtered and bottled.
