Grapes: 100% Teroldego (Trentino local grape variety).
Vineyard location: The vineyards are located the most suitable terrain for this variety, considered the “Prince” of Trentino.
Soil type: Alluvial landfill, highly fertile surface, well-drained under soil.
Vine training system: Guyot and Trentino pergola.
Vinification: Grapes are selected and harvested by hand and undergo the red vinification process. The fermentation consists of 8-15 day maceration on the skins at controlled temperature (26-28 °C). Then the wine is aged partly in steel and partly in small wooden casks. Then, further ageing in the bottle for a couple of months.
Characteristics: Intense ruby red colour. Intense, fruity with raspberry and redcurrant hints, refined on the nose. Dry, firm, good tannin and sapidity.
As accompaniment: Game dishes, mixed grill, veal stew, matured cheese and local salami.
