Vino Nobile de Montepulciano is a leading Italian red wine produced from hand harvested grapes. It had undergone carbonic maceration for two to three days at a temperature of 10-12°C, inoculation of local yeasts using a "pied de cuve" or "fermentation starter" and fermentation in 48hl tanks. It had been aged for 14-16 months in tonneaux made of Slovenian oak with final aging in 20-30hl barrels.
