AOC SAINT-VERAN "Les Terres du Sud" (BOURGOGNE), White wine, 2014
APPELLATION : SAINT-VERAN (the Southest appellation of Burgundy)
Cuvée : "Les Terres du Sud" means "The lands of the South"...this vineyard is at the border with Beaujolais...A terroir so Bungundian but enjoyong a generous sun!
Soil : Scree of limestone on clay (lower bajocian)
Average age of the vines : 50-55 years old
Grape variety : 100 % Chardonnay
Vineyard management : Sustainable management of the vineyard. No use of chemical weed killers. The soil is plowed in the rows and under the vines.
Yield : 50 Hectolitres/Ha
Harvest : The harvest mae by hand,at the optimum of maturity of the grapes (not too green of course, but neither overripe…we do not want to loose the freshness of this fine Chardonnay).
Vinification : Long and careful pressing, using a pneumatical press. Alcoholic fermentation and malolactic fermentation (completely done) are made into used barrels that are from 6 to 9 wines old. 10% of new oak. Ageed on the lees of fermentations during 15 months.
Bottling : No fining. Bottled at the cellar by ourselves.
Tasting notes : This wine offers a nose on a beautiful typicality - yellow ripe fruits (pear, apricot, …) and white flowers. The mouth is full and round, with a light woody taste, and the finish is fresh and tense. But rather than long comments, get a bottle and enjoy…
