We want to create the authentic taste of "Inaniwa Udon" born in Inaniwa, Akita Prefecture. That was the founding spirit of Ogawa.
The raw materials for the dough are the famous spring water that springs from the Kurikoma mountain range in Inaniwa, a region with heavy snowfall.
Domestically produced wheat flour and sea salt. And the air, wind, and time of Inaniwa.
The craftsmen knead and mature the dough by hand, and finish it beautifully, white as snow.
After maturing five times over four days, air bubbles are created in the noodles, and firmness is created.
The drying time is adjusted according to the temperature and humidity of the four seasons.
No oil or additives are added. It is finished with care, time, and heart.
The "firmness and smoothness of Ogawa" that was born in this way
will continue to deliciously decorate the dinner table.
