Production Method:
1. This Wine is made using a natural fermentation process (no Sugar or alcohol are added)
2. The Grapes collected for this wine are of the most outstanding quality. After Collection they are dried in a special facility for at least 4 Months in natural conditions using wind. The Weight of the grapes decreases by at least 40%.
3. Second Selection of grapes continuously takes place during the drying process. Unsatisfactory Berries are omitted.
4. Stems are removed and the grapes are transferred for fermentation in special patented by Ca’Botta Fermentation stainless steel tanks
5. Fermentation Is carried out within 18‹--‐22°C Temperature range
6. Maceration Takes place for 20 days
7. After the fermentation is complete wine is relocated into small American--‐oak Barrels for 12months. Then the wine is poured into bottles and is given more time to mature and develop.
Organoleptic quality:
This luxurious Amarone is very deep and dark in colour. It is full bodies yet balanced with convincing yet sensible tannins. Oak further sheaths and smooth the overall perception of the wine. The palate brings out dark chocolate and ripe pomegranate. Aroma is complex and slightly spicy with prominent notes of cherry and raisins. Long and smooth aftertaste carries vanilla.
