CABERNET SAUVIGNON
The project began in 2016 in Montpellier, France, where a group
of winemakers decided to create a high-quality project on a
human scale.
Thus, in 2018, the first of the wines was born: Les deux
Œnologues Super Premium Cabernet Sauvignon, 100% of the
variety coming from the upper Maipo Valley. This area is
recognized worldwide for having one of the best terroirs in the
world for the production of high-end red wines.
TASTING NOTES & PARING WINEMAKING
Cherry red with purple hues. Notes of cedar, leather, tobacco,
blackberries, and cherries with a hint of balsamic. On the palate,
it has medium acidity, silky tannins, and is well-balanced. The
finish is medium and elegant.
This wine pairs very well with red meats and game.
VINIFICATION
Traditional vinification with
maceration and
fermentation in open
French oak barrels. Aged for
18 months in oak barrels
that have been used once or
more.
AGING POTENTIAL
At least 7 years in a wine
cellar, under controlled
humidity and temperature
conditions.
VARIETIES
For now, only two red
varieties: Cabernet
Sauvignon and Carignan.
