Tea polyphenols are pale yellow to brownish-yellow aqueous solutions, powdered solids, or crystals with a slight tea aroma. They have an astringent taste and are readily soluble in water, ethanol, and ethyl acetate, and slightly soluble in oils. They exhibit good heat and acid resistance, remaining highly stable within a pH range of 2–7. They are slightly hygroscopic, with aqueous solutions having a pH of 3–4. They readily oxidize and turn brown under alkaline conditions. Catechins account for approximately 60%–80% of the total tea polyphenols. In polyphenol extraction from green tea and its byproducts, the tea polyphenol content is greater than 95%, including 70%–80% catechins; 4%–10% flavonoids; 0.3%–0.5% gallic acid; 0.2%–0.5% amino acids; and 0.5%–1.0% total sugars. Chlorophyll is mainly composed of pheophytin, with a content of 0.01%–0.05%.
