The ayu is a Japanese fish sometimes referred to as sweetfish. Ayu is in the salmon family and can be found in rivers flowing from Hokkaido down to Kyushu. They are small and grow to just under 8 inches. This tasty freshwater fish is a classic summer food in Japan.
