Methionine is a sulfur-containing, non-polar, aliphatic amino acid; it is an essential amino acid for the human body, abbreviated as Met or M. It is a glucogenic essential amino acid. First isolated from casein in 1922, it features a thioether structure. It exists in both L- and DL- forms, with the naturally occurring form being the L-isomer. It has a relative molecular mass of 149.21, a distinctive odor, and a slightly sweet taste; it is stable against air and heat.

L-Methionine is an essential nutrient for humans and animals and is commonly used in the formulation of compound amino acid infusions. DL-Methionine is widely used in mixed feeds for cattle, pigs, and broiler chickens. Its metabolism is linked to that of cysteine. In prokaryotes, formylated methionine serves as the initiating amino acid for protein biosynthesis. It can also be activated by ATP to form S-adenosylmethionine, acting as a methyl donor in the synthesis of creatine and choline.
