The salt is sun-dried sea salt, rich in minerals. It has a complex flavor mixing of bitter, sweet, and "umami" (savory) tastes, enhancing the flavor of the other ingredients. The soybeans are first soaked in well-known natural spring water from the heights of a local mountain. It is mellow soft water that contains a good balance of minerals.
